Chow Mein Hotdish

1 lb. Ground Beef
1 sm. onion- diced
1 cup celery- diced
1/2 cup raw rice (Minute Rice)
1 can Cream of Mushroom Soup
1 can Cream of Chicken Soup
1 can of water
1 sm. can bean sprouts (optional)
1 tbl. soy sauce
1 pkg. Chow Mein Noodles
Brown hamburger with onion. Salt and pepper to taste. Add in celery, rice, soups, water and sprouts. Bake covered in oven at 350 degreees for 45 minutes. Just before serving, stir in chow mein noodles (1/2 to whole package). Serve and enjoy!


Easy Chicken Casserole

1 pkg. noodles
1 can cream of chicken soup
1 can cream of mushroom soup
1 can boned chicken or 1-2 cups leftover chicken of any type
1/2 cup celery
1/2 cup onion
Cheese slices
Cook noodles, drain.  Add soups, chicken, celery, onion and enough water to moisten. Bake in glass pan in 350 degree oven until bubbly, about 45 minutes. Top with cheese slices and return to oven until melted.


Egg Casserole

1 pkg. Ore-Ida cubed hashbrowns
2-3 cups shredded cheddar cheese
1 can cream of celery soup
2 cups milk
1 pkg. Oscar Meyer real bacon pieces
8-12 eggs
Let hashbrowns slightly thaw in bottom of 9×13 pan. Mix eggs with milk, cheese, soup and bacon. Pour over hashbrowns. Let sit overnight. Bake at 325 degrees for 1- 1 1/2 hours or  until set.

1 lb. ground beef, browned
3 1/2 oz sliced pepperoni
1 glove garlic, chopped, optional
1 med onion, chopped, optional
1 med green onion, chopped, optional
1 can mushrooms, drained
32 oz. jar spaghetti sauce
1 lb. pasta, cooked and drained
3 cups mozzarella cheese
Mix together pepperoni, mushrooms and sauce. Layer with cooked pasta and cheese. (Pasta, beef/sauce mix, cheese- repeat) Bake at 375 degrees for 35-40 minutes or until bubbly. Also good mixed together.


Golden Chicken Squares

8 slices bread
2 cups chicken, or more
1/2 cup onion, chopped
2 T. parsley
1 can mushrooms, drained
1/2 cup mayo
salt & pepper
3 eggs
2 cups milk
1 can cream of chicken soup
1 cup shredded cheddar cheese
Cook chicken and cool. Cut bread into 1/2 inch cubes. Place half of them in 9×13 pan. Combine chicken, onion, parsley, mushrooms, mayo and salt & pepper. Spoon over bread. Top with remaining bread cubes. Beat eggs slightly and blend in milk. Pour over bread mixture. Cover and refrigerate over night. Just before baking top with cream of chicken soup. Bake at 350 degrees for one hour or until set. Sprinkle cheese on top and return to oven. Let set 10-12 minutes before cutting.


Stuffed Peppers

1 lb hamburger
8 oz tomato sauce
1 cup cooked rice
4 Peppers
mozzarella cheese
garlic- to taste
chopped onion- to taste
worchestershire sauce- to taste
salt & pepper- to taste
Cook hamburger. Add onion and garlic. Add cooked rice, tomato sauce and worcherstershire sauce. Salt and pepper to taste and cook til warm. Meanwhile, wash peppers and boil for 5 mintues. Scoop mixture into peppers. Bake at 350 degrees for 15 min. Top with cheese and return to oven for 15 additional minutes.

Fried Spaghetti

1 lb. pork or chicken- cubed
sliced mushrooms
1 bunch green onion- chopped
garlic- to taste
1 pkg. spaghetti or angel hair pasta
2 tomatoes- diced
1 stick margarine
2 tbsp. pinch of herbs (italian seasoning)
1 green pepper- chopped
Lightly oil frying pan and cook green onion, garlic and pork/chicken. Add mushrooms and tomatoes (include any juice from the tomatoes). Cover and simmer. Cook pasta and drain. Add meat, butter and seasoning to pasta and enjoy.
