IMG_4105Cereal Crunch Ice Cream Dessert.. aka Ice Cream Delish

2 1/2 cups Rice Krispies
1/2 cup butter, melted
1 cup brown sugar, packed
1 cup coconut, optional, but helps hold crust together
1/2 cup chopped nuts, optional
1/2 gallon vanilla ice cream
Combine melted butter, brown sugar, rice krispies, coconut and nuts. Mix well. Spread 1/2 in bottom of 9×9 pan. Slice ice cream and put on mixture. Top with other half of mixture. Freeze.  Note: can put in 9×13 pan for thinner ice cream, I double crust mix when I do this.

Peanut Haystacks

1 tbsp smooth peanut butter
3 oz. chow mein noodles
1 cup roasted peanuts
1 pkg. butterscotch chips (6 oz)
Melt peanut butter and butterscotch chips together in a heavy sauce pan over low heat. Add noodles and peanuts to mixture and mix until well coated. Form little clusters on foil and let stand in refrigerator until firm.

Peanut Clusters

1/2 pkg. almond bark
12 0z. chocolate chips
2 tbsp peanut butter
1 lb. salted, hull-less peanuts
Melt almond bark and when nearly melted add chocolate chips and peanut butter. Stir until all melted. Then add peanuts. Cool slightly and drop by spoonfuls onto waxed paper. Cool in refrigerator.


2 cups flour
2 cups sugar
1 cup margarine
1/4 cup cocoa
1 cup water
1/2 cup buttermilk
1 tsp. soda
2 eggs
1 tsp. vanilla
Mix together flour and sugar and set aside. Bring margarine, cocoa and water to a slight boil, stirring constantly. Add flour and sugar to mixture.  In a small boil mix buttermilk and soda together and then add to mixture. Finally add in eggs, slightly beaten, as well as vanilla. Pour in foil lined pan and bake at 400 degrees for 20 minutes.


1/2 cup margarine
1/4 cup cocoa
5 tbsp. Milk
1 lb. powdered sugar
Bring margarine, cocoa and milk to a boil. Add in powdered sugar little by little, beating until smooth. Spread on hot brownies. Top with nuts if desired.

Grandma Thiesse’s Rice

1 cup rice
1 cup water + 1 tsp salt (in bottom of double boiler)
1 cup sugar
Cook rice until thick in double boiler. Add enough milk to cover rice, also add 1 cup sugar. Cool until milk cooks into rice. Serve with cinnamon.
Note: takes at least 1 hour.

Grandma Lucielles’s Lemon Bars

3 eggs
1 can lemon pie filling
1 tbsp lemon juice
1 box lemon cake mix
Mix and bake at 350 fro 20-30 minutes. Frost with lemon frosting.

Cream Cheese Mints

3 oz. cream cheese
1 3/4 cup powdered sugar
2 tablespoons margarine
few drops flavoring of your choice
Mix cream cheese and margarine. Add in powdered sugar until not too sticky. Chill dough. Roll in sugar. Put in molds or shape as you desire. Store in refrigerator.

Chocolate Chip Cookies

1 cup sugar
1 cup brown sugar
1 cup butter
2 eggs
1 tsp soda
1 tsp salt
1 tsp vanilla
3 cups flour
1 cup chocolate chips
Cream sugar and butter until creamy. Add eggs and vanilla and mix. Add remaining ingredients and roll into balls. Bake at 350 for 8-12 minutes.
