Black Bean Salad

3 cans black beans, drained
1 can mexi-corn, drained
2 cans tomatoes w/ green chilies, partially drained
2 roma tomoates, diced
2 bunches green onion, diced
 
Mix and chill for at least 8 hours. Serve with tortilla chips or rice.

 

Applesauce Jello

1 3 oz. Jello
1 can applesauce (16 oz.)
3/4 cup 7-up
 
Bring applesauce to boil, add jello. Mix. Cool to touch. Add 7-up and refrigerate. Also is good mixed with cool whip.

 

Tortellini Salad

Cheese tortellini
Grape tomatoes
Broccoli
Bacon
Green pepper
Red pepper
Coleslaw dressing
 
Combine all ingredients & serve cold. Make as little or as much of this salad as you’d like!

 

Pistachio Salad

1 sm. pkg. instant pistachio pudding
1 20 oz. can crushed pineapple, undrained
1 8 oz. container whipped cream
1/2 pkg. miniture marshmallows
 
Combine all ingredients. Chill several hours before serving.
 

Macaroni Tuna Salad

from Mom
1 pkg. macaroni, 6-7 oz.
1 can peas, drained
1 can tuna, 6 1/2 oz., drained
1/2 pkg. Lipton onion soup mix
Mayo
 
Bring 6 cups of water with 1 t. of salt to boil. Add macaroni. Cook 8-10 minutes, stirring occasionally. Drain and cool. Add drained peas & tuna and mix. Add onion soup mix to your taste. Then add enough Mayo or salad dressing until salad isn’t dry. Mix thoroughly and refrigerate.

 

Cheesy Potatoes

-from Mom 
2 lb. frozen cubed hash browns
1 can cream of celery soup
1 can cream of potato soup
1 sm. container of sour cream
Cheese slices
 
Place thawed potatoes in greased 9×13 pan. Combine soups and sour cream. Spread over potatoes. Bake at 350 degrees for 30 minutes.  Add slices of cheese on top and bake for another 30 minutes.

Grandma Thiesse’s Rice

1 cup white rice
1 cup water (cold)
1 tsp salt
milk
1 cup sugar
Cook rice in double boiler ( 1 cup cold water and salt in bottom) until thick. Add enough milk to rice to cover the rice, also add 1 cup sugar and cook until milk is absorbed. Serve with cinnamon. Note: takes about one hour to make.
